UTM (former IFTM) was appointed as a protection unit of National Intangible Cultural Heritage for "Macanese Culinary Arts"
In 2021, the General Office of the Ministry of Culture and Tourism announced the list of the fifth batch of National Intangible Cultural Heritage representative project protection units. UTM (former IFTM) was appointed as a protection unit of the National Intangible Cultural Heritage for "Macanese Culinary Arts". "Macanese Culinary Arts" is an important historical product of the intersection of Chinese and Western cultures in Macao for more than 400 years. Its unique cultural heritage demonstrates the changes in the city's economy, society, people's livelihood and population composition over the past 400 years. As a national intangible cultural heritage, "Macanese Culinary Arts" have enriched Macao's soft power as a "Creative City of Gastronomy" and also expanded Macao's tourism resources.
As a protection unit for national intangible cultural heritage, UTM (former IFTM) will carry forward the past and open up the future. In accordance with the requirements of the "Intangible Cultural Heritage Law of the People's Republic of China" and the "Opinions on Further Strengthening the Protection of Intangible Cultural Heritage", we will implement "protection first", "inheritance and development" policy, and conscientiously doing well in the work of representative project protection units for national intangible cultural heritage. The Bachelor Program in Culinary Arts Management of School of Hospitality Management of UTM and the Catering Industry Courses of the School of Continuing Education have been providing cooking theory and practices of "Macanese Cuisine" for many years, giving students and the public the opportunity to learn and understand the history and skills of "Macanese Cuisine". A "Macanese Cuisine Database Theme Corner" was setup in UTM Library in 2020 to provide students and public with the opportunity to learn about "Macanese Cuisine" from different literatures and multimedia. Original copies of books as well as duplicates of manuscripts of Macanese cuisine can be found at the theme corner for public reference, to help promote the education, inheritance and promotion of Macao’s food culture, and to contribute to the historical mission of safeguarding “Macanese Culinary Arts”. UTM Library will continue to collect publications related to Macanese cuisine for education, inheritance and promotion of the extraordinary culture and tradition of Macanese gastronomy.
